
Fillet
of salmon with courgette and tomatoes (for 4 persons)
- 4 fillets of salmon
- lemon juice (1/2 lemon)
- salt and pepper
- 2 dl vegetable oil
- 350 g small courgettes
- 1 small clove of garlic
- 300 g beefsteak tomatoes
- fresh thyme
1) Rinse the fillet of salmon and pat it down. Remove, if
necessary, the bones. Sprinkle the fillet of salmon with lemon juice and
some salt and pepper. Put it in the refrigerator (preferably covered)
2) Rinse the courgettes and remove the stalk. Cut the courgettes
to small pieces. Rinse the garlic. Put the tomatoes in boiling water,
this makes it easier to peel the tomatoes. After that you have peeled
the tomatoes you need to cut them in 4 pieces. Cut the flesh of the tomatoes
in small pieces.
3) Heat 1 dl of vegetable oil in a frying pan. Fry the courgettes.
Squeeze the garlic above the frying pan and add the tomatoes. Flavour
everything with some salt, pepper and thyme. Let everything braise during
10 minutes. (Put the lid on the frying pan)
4) Meanwhile you can heat the rest of the vegetable oil in an other frying
pan. Put the fillets of salmon in the frying pan. Fry each side during
at least 4 minutes.
5) Flavour the vegetables once again and put them with the fillets of
salmon on preheated plates. Serve it with potatoes and some parsley.
